Vegetarian Tacos

Delicious black bean and sweet potato tacos using our Taco Seasoning. Mix up your Taco Tuesday and go plant-based with us!

 2 Sweet Potatoes, cubed
 540 ml (19 fl oz) can black beans, drained
 341 ml (12 fl oz) can of corn, drained
 10 ml (2 tsp) vegetable oil
 Tortillas or taco shells

Heat oil in large pan over medium heat. Add cubed sweet potatoes and cook 10 -15 minutes.

Add black bean and corn, stir and cook for 1 minute. Add seasonings, stir to coat and cook until potatoes are cooked through, about 5-10 minutes.

In the meantime, warm up your tortillas or taco shells in the oven. Get all your favorite toppings ready (fresh cilantro, guacamole, tomatoes, sour cream, etc.)

Dress your taco any way you like it and have fun!
